Amaranth has the highest calcium content among cereals and is rich in iron and Vitamin B-17. Known as the Grain of the Gods, it contains 75%-87% of total human nutritional requirements. Amaranth provides high-quality protein with a nearly perfect balance of essential amino acids including lysine and methionine which are not found in many grains.

To make Puffed Amaranth, tiny seeds of amaranth are heated until they "puff," increasing their volume and creating a light, crunchy, popped version with a toasty, nutty flavor. Puffing amaranth gives it an airy-light texture and a finely roasted nutty note, making it a delicious nutty topping for porridge and muesli.
